You will need:
- 15 crisp papdis
- 1 small cup sev
- 1 large potato (boiled and chopped)
- 1 small onion (finely chopped)
- 1/2 cup chopped coriander leaves
- 1/2 cup mint coriander chutney
- 1/2 cup tangy dry raw mango chutney (also called as saunth)
- 1/2 tbsp salt
- 1/2 tbsp red chilli powder
- 1/2 tbsp chat masala
- Mix all the spices (salt, red chilli powder, chat masala) and the chopped onions with the potatoes
- Place the papdis on a plate
- Top it with the potatoes, onion and spices mixture
- Top it with green chutney and with saunth chutney
- Finally sprinkle some sev and garnish with chopped coriander leaves
- Serve immediately
